Spring Recipes

Country-Witch Eggnog
Recipe by Gerina Dunwich

1 cup apple cider
3 cups milk
2 eggs, beaten
1/2 cup whipping cream
1/2 cup sugar
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons brandy

Combine all of the ingredients in a large cauldron or pot and cook over medium heat for 13 minutes. Pour the hot eggnog into mugs and top each serving with fresh whipped cream (if desired).

Country-Witch Eggnog is the perfect drink to serve your Wiccan friends and family members at Yuletide (Winter Solstice) and Ostara (Spring Equinox) sabbats. (This recipe yield two quarts.)

~ SPINACH QUICHE ~

Unbaked pie crust (9-inch)

2 eggs

1 cup plain yogurt

10 oz frozen, chopped spinach

1 tbs flour

1/4 tsp pepper

4 oz sliced fresh mushrooms

4 oz Cheddar cheese, grated

1/4 cup green onions, chopped

PREPARATION: Preheat your oven to 425F. Prick the pie shell in a few places with a fork, and bake for 5 minutes. Thaw out the spinach in the microwave, then blot with paper towel to dry it off. In a mixing bowl, beat together the yogurt, eggs, flour and pepper until blended through. Mix in the spinach. Later the bottom of the crust with mushrooms, cheese and onions. Pour the egg mixture over top. Bake for 15 minutes, then lower the temperatures to 350F. Bake quiche for an additional 30 minute

Gaia’s Rose Hip Wine

Ostara Egg and Vegetable Casserole

12 eggs
2 cups non-fat cottage cheese
2 tablespoons Mrs. Dash seasoning blend
1 cup reduced fat shredded Marble Jack or cheddar cheese
2 cups freshly sliced veggies (onions, red pepper, broccoli, cauliflower)
salt and pepper, optional

Directions:

Bake at 350° for 45 minutes to 1 hour. Eggs should be set and top very lightly browned. Serves 8.
